Directions

Steam the green asparagus in a pan with a little water for 4-5 mins. Remove the asparagus from the pan and cut into small pieces. Set aside some of the asparagus heads to garnish the soup before serving.

Return the asparagus pieces (minus the heads) to the pan. Add the stock and bring the soup to the boil. Blend the soup and then add the cream. Season with salt and pepper.

Heat the baguettes under the grill.

Serve the asparagus soup piping hot with warm baguettes.
