Directions
Finely slice the leeks and onion.
Mix the curry powder with 1/3 of the oil in a pan. Add the leeks and onion. Thin with water. Cut the chicken into strips and add to the pan. Season with salt and pepper and allow to simmer under cover for approx. 10 mins.
Cook the pasta according to the intructions on the packet. Add the milk to the pan of chicken, together with the rest of the oil, and bring to the boil. Stir the pasta into the curry sauce.
Serve the pasta garnished with a sprig of parsley.
Tip
Try adding a few juniper berries to the dish. Crush them and add to the pan with the chicken.
