Directions
Cook the noodles. Pour into a sieve.
Pat the meat dry with kitchen roll. Heat half of the oil in a large frying pan or wok over high heat. Place the meat in the pan and brown before turning. Brown the meat on all sides - total cooking time 1-1½ mins. over high heat. Transfer the meat to a plate.
Rinse the mushrooms and cut into slices. Cut the onions into thin wedges.
Heat the other half of the oil in the pan. Add the onion and mushrooms. Sauté for 2 mins. Add the rinsed and drained spinach and the sesame seeds and fry for 2-3 mins. Add the soy sauce and grated ginger. Stir in the meat and reheat. Season with salt and pepper. Stir the drained noodles into the dish or serve on the side.
Tip
Cleaned, sliced mushrooms are available fresh or frozen in a number of supermarkets.
You can also slice your own pork strips from pork schnitzels.
Strips of pepper and/or baby sweetcorn can also be added to the stir-fry.
