Easy homemade junk food.
Directions
Light your kettle grill (or preheat the oven to 200ºC/fan oven 180ºC).
Wash the chicken and remember to make sure that the giblets have been removed. If the chicken still has its giblets, remove them. Rub salt inside the chicken and rub the skin with coarse salt and paprika. Roast the chicken over indirect heat in the kettle grill for approx. 1 hour depending on its size (or 1 hour in the oven). Turn the chicken when half way through the cooking time. Cut the chicken into suitably-sized pieces.
Scrub the potatoes and cut into chips. Put the chips on a baking tray lined with baking paper and toss in rapeseed oil. Bake in the oven for approx. 30-45 mins. Keep an eye on them as they should be crisp and golden brown.
Finely chop the onion, pickles and carrot. (Use a mini chopper if you have one). Put in a bowl with the crème fraîche, mayonnaise and curry powder. Season the remoulade with salt, pepper and sugar.
Serve the fries on a bed of homemade remoulade with the grilled chicken.
Tip
Why not grill an extra chicken so you have one spare for the packed lunches or the freezer?
