Directions
Peel the potatoes and cook until tender.
Cut the courgettes into 1 cm slices.
Brush the courgette slices with olive oil.
Heat the barbecue or griddle pan until very hot and grill the courgettes until they have grill markings on both sides.
Arrange the grilled courgettes on a large dish.
Whisk the oil, lemon juice, finely chopped garlic, salt and pepper together to make a dressing and pour over the courgettes.
Bring 3 dl water to the boil in a pan and add a little salt.
Fold the plaice fillets in half, place in the water and simmer for 4 mins.
Serve the plaice fillets with the grilled courgettes, potatoes and bread.
Tip
Instead of plaice, you can use dab or flounder.
