Directions
Peel the potatoes and cut into large cubes. Clean and slice the leeks. Peel and dice the onion.
Saute the potatoes, leeks and onions in a pan. Add the stock and cook through until the potatoes are tender. Blend the soup and season with salt and pepper.
Cut the parma ham into small pieces and fry until crisp.
Serve the soup with a sprig of parsley and sprinkle the parma ham over the top.
Tip
Why not try adding a splash of white wine to the soup?.
