Intro
Delicious low fat moussaka
Directions
Finely dice the onions. Fry the meat and onion in a little balsamic vinegar. Add the chopped tomatoes, salt, pepper and garlic, and allow to simmer for approx. 10 mins.
Preheat the oven to 200º C/fan oven 180º C.
Finely slice the aubergines and potatoes. Arrange alternate layers of tomato sauce, potatoes and aubergines in an oven-proof dish. Bake for approx. 30 minutes.
Mix the garlic with the yoghurt and season with salt and pepper.
Serve the dish with lemon wedges, yoghurt and a sprinkling of parsley.
