Directions
Preheat the oven to 200º C/fan oven 180º C.
Score the duck fat by cutting right through to the meat. Rub with salt. Place the duck in an ovenproof dish, fat side up. Pour a little water into the bottom of the dish. Bake for approx. 30. mins.
Rinse the mushrooms and cut into thick slices. Cut the carrots into sticks. Stir-fry the mushrooms and carrots in olive oil for 3-5 mins. over a high heat. Season with salt and pepper.
Serve the duck with the carrots and mushrooms.
Tip
Instead of button mushrooms, you could try using other types of mushrooms.
