Intro
You will need a 16-cup muffin tin.
Directions
Chop the chocolate and melt the margarine.
Preheat the oven to 200º C.
Mix the dry ingredients together in a bowl with 2/3 of the chopped chocolate. Put the wet ingredients in another bowl and lightly whisk together. Add the dry ingredients and fold together with a spoon until well blended.
Lightly grease the muffin tin and divide the muffin mixture into the cups with a spoon. The cups should be no more than 2/3 full. Sprinkle with a little chocolate.
Bake in the oven for approx. 15 mins. depending on the size of the tin.
Tip
The muffins are done when the top springs back when pressed with a spoon. Leave in the tin for 3-4 minutes before taking them out to cool on a rack.
