Directions
Cut the onions into wedges and chop the garlic.
Heat the oil in a frying pan and sauté the onion and garlic over medium heat for 3-4 mins. Keep stirring the onions to make sure that they do not become too brown.
Cut the tomatoes into wedges and the olives into slices.
Add the tomatoes, olives, chilli and tarragon or parsley to the pan together with the onions and cook for 10 mins. until the tomatoes are very soft.
Cook the pasta according to the instructions on the packet.
Add the prawns to the sauce and cook for 2 mins. over low heat.
Season with salt and pepper.
Serve the dish with the pasta and bread.
